CHATTING LUA WITH LUKE x CHRIS
Recently, one of our directors, Chris, caught up with Luke Nguyen inside LUA at the new Sydney Fish Market in Glebe. It was one of those full circle moments that makes projects like this so rewarding.
Chris first met Luke back in 2023, when plans for Hay St Market were only just beginning to take shape. Little side note, did you know you can find Luke’s famous Pho (based on his father’s recipe) and dumplings at Hay St Market?
Fast forward two and a half years and we have now had the pleasure of delivering LUA together on behalf of Doltone Hospitality Group. Seeing the restaurant now complete, operating and full of life has been incredibly special for our team.
LUA brings together beautiful interiors, warm hospitality and the energy that Luke and his team are so well known for. From the moment you walk through the space, there is a sense of vibrancy and comfort that feels effortless. It is the kind of venue people naturally want to meet up in, whether for lunch, long dinner or a drink somewhere in between.
One of the best parts of projects like this is watching people finally experience the space as it was intended. After years of planning, design, construction and collaboration, there is something very rewarding about seeing guests settling in, conversations flowing and the venue finding its rhythm.
We are incredibly proud to have brought LUA to life alongside Luke and his hardworking team. Collaborations like this are what make the process so enjoyable and meaningful for us.
