We are incredibly proud to have been the builder behind one of Sydney’s most exciting new destinations, Hay St Market.

More than three years in the making and spanning over 3,000 square metres within Paddy’s Market, Hay St Market opened in March 2025 as a vibrant space where food, drink, shopping, and community come together in one unforgettable experience.

This project has been a true labour of love. Delivering this project for Doltone Hospitality Group, collaborating with the team at Loop Creative, and working alongside many of our best subcontractors and suppliers, we’ve brought a vision to life that celebrates the spirit and diversity of Sydney.

A Market Built on Collaboration

Hay St Market is more than a project. It is the result of countless hours, ideas, and hands coming together. From structural works to bespoke fit-outs for over 48 concessions, every detail was crafted with care, passion, and dedication.

Our team worked shoulder to shoulder with industry-leading trades and specialists, ensuring the design not only reflected Loop Creative’s vision but also delivered the function and flexibility required to create a truly world-class market.

A Celebration of Sydney

Designed to honour Sydney’s multicultural heart, Hay St Market is alive with flavours and experiences from all corners of the globe. From Roman-style woodfired pizza and Cypriot chargrilled dishes to Vietnamese pho soup dumplings, it is a true melting pot and one that we feel privileged to have built a home for.

As Sydney’s first fully licensed market, Hay St Market sets a new benchmark. With three distinct bars including Cans & Crates, Traders Bar, and La Charcuteria and a host of food, retail, and specialty traders. Delivering this level of variety under one roof was no small task, but it is one we embraced with pride and commitment.

We are incredibly proud to have partnered with Doltone Hospitality Group, Loop Creative, and the many subcontractors who poured their skill and passion into this project. Together, we have reimagined one of the city’s most iconic spaces into a market that belongs to everyone.

Hay St Market is now open, and we could not be prouder to see it buzzing with life.
